Earth, air, fire and water all all captured on the gorgeous label of the Mt. Fishtail Sauvignon Blanc. We found this wine unusaully soft for a New Zealand Sauv Blanc and absolutely loved it. The depth of flavor is due to the fact that this wine underwent the Sur Lie Ageing process. Sur lie is the process of
allowing the wine to sit on the lees (left over dead yeast cells) in order to extract flavors and enrich the palate. Wines aged on their lees tend to be creamier, richer, fuller-bodied, with greater depth and complexity.
